Taco de Canasta Workshop. It has always been believed that tacos de canasta originated in Mexico City, but they are really originated in the community of San Vicente Xilo ochitla, belonging to the municipality of Nativitas in Tlaxcala. This community in the south of the state lived from agriculture and over the years its inhabitants began to emigrate due to lack of opportunities to support their families. Some people began to make steamed tacos to sell them in nearby communities with more movement. But they saw the need for mobility to be able to reach the largest number of customers, and made some modifications making them with potatoes, beans and pork rinds, transporting them in a basket the head of the family who took his bicycle and set off on the road in the hope of selling his product, such was the success that several families of San Vicente began to make the tacos that are now so famous and so sought after in the big cities of Mexico. The traditional blue rubber with which it is identified, also has its history, it is said that years ago tortillas were also sold in baskets and bicycles, but these were identified with white rubber, so to differentiate that what was sold were tacos, someone came up with the idea of dressing his basket with blue rubber to identify himself as a seller of tacos de canasta, Thus was born the classic image of the taquero of San Vicente, mounted on his bicycle, with his basket lined with blue plastic, and his big jar of salsa, which is a guarantee of the originality of the classic tacos de canasta of San Vicente Xiloxochitla, Nativitas, Tlaxcala.
